I posted on facebook that I was working hard on my menu plan the other day, among other things around the house, and got lots of requests for my recipes and my meal ideas.
Ya’ll, I have GOT to do better. I think I say this at the beginning of each year. {rolls eyes.} My spending habits have to get under control…and food is the major source of that!! Meal planning DOES help me with this…so I’m giving it a go. again. {If at first you don’t succeed, try TRY AGAIN!!!}
So, here we go! 🙂 Honestly, a lot of these ideas are on my pinterest boards (recipes & healthy meal ideas) but putting them in one place will be handy, too! I have NOT personally tried each of these recipes…but most of them I’ve read the comments or know someone personally who has tried it, so my hopes are a little higher that they are good. 🙂 I will try to put comments on the meals we  have already tried and enjoyed.
I do NOT have meals scheduled for Sundays or Wednesdays at this point. Wednesday is our “crazy” day with afernoon co-op and then dance at 4pm, then I have to be at church around 5:45…so no time for dinner prep or even sitting down to eat it. Still trying to figure out Sunday – maybe a big roast in the crockpot or something. I am trying to put crockpot meals on Tuesdays because we are out of the house for several hours with piano lessons and errands. Still pondering that…but here is what I have so far!
January Meals

2 Simply Great Chicken (my SIL says this is good!)
3 salmon patties & roasted broccoli
4 creamy chicken enchiladas
5 chicken pot pie (I’ve made this recipe quite a few times, it’s good. I never put the egg in.)

7 breakfast – eggs, sausage, etc.
8 chicken noodle soup (we’ve already had this – it is really good!)

10 soft tacos – beef
11 grilled cheese and tomato soup
12 oven fried chicken

14 mexican hamburger casserole
15 BBQ chicken sandwiches (cook chicken in crockpot all day with BBQ, then shred and serve on buns)

17 chicken alfredo & salad

19 grilled steaks

21 Pioneer Woman’s cube steak sandwiches & fries

24 potato soup
25 soft tacos – chicken
26 grilled cube steak with peppers and potatoes

28 fried rice and chicken (I’ve used this recipe before and it’s great!)

Notes: I planned only meals with the meat in our freezer which is: chicken, ground beef, a few steaks and cube steak. My kids don’t like the traditional “cube steak” with gravy, so I’m trying some new recipes with that meat!
Sides: I don’t list all my sides, because generally I keep veggies and salad here and just rotate what I have. Lately we’ve been not doing any starchy sides but trying to do all veggies and salad. I love roasted broccoli and carrots, sometimes I just put out raw veggies and dip, sometimes just a salad. I don’t make rolls with every meal anymore either. 🙂

I love this quiche recipe: http://comfyinthekitchen.com/2012/04/easy-ham-and-cheesy-quiche/. I’ve made it several times and I bet you could easily tweak it to put veggies in it if you wanted as well. It’s delicious. : )

Also, we enjoy the bbq chicken that you have on your menu but sometimes I will serve it on baked potatoes instead of buns, just to change things up a bit. 🙂
