When I first saw this recipe on Pinterest, I was a little skeptical…just because I have found it a bit daunting to find recipes that fit all of my criteria!! ha!! It has to be relatively easy for me to make it, the kids have to enjoy it, and I try to make healthier choices for all of us as well. So, I decided to give this a try and am SO glad we did!! We have already made these “energy balls” 2 times now! And the 2nd time around, we tripled the recipe!! I saw this recipe over on Pinterest, but the original link to the recipe is found here. No-Bake Energy Balls
1 cup oats
1/2 cup peanut butter (or other nut butter)
1/3 cup honey (local, if possible!)
1 cup coconut flakes
1/2 cup ground flaxseed
1/2 cup mini chocolate chips
Mix everything above in a medium bowl until thoroughly incorporated. Let chill in the refrigerator for half an hour. Once chilled, roll into balls and enjoy! Store in an airtight container and keep refrigerated for up to 1 week.
